Kuma Signature Hui Jia

The Taste of Home - Created in collaboration with talented bartender Andrew Tseng from Yilan.

Hui Jia is a cocktail that combines the unique flavors of Kuma Gin with the use of many spices traditionally favored by indigenous Taiwanese peoples. It incorporates local specialties from Taitung and Yilan—red oolong tea and kumquat—creating a flavor profile that highlights the distinct characteristics of Taiwan’s eastern region. The name "Hui Jia" is derived from the old name of Hualien, "Hui Lan”, inviting those who are far from home to return and experience the warmth and care of their hometown.


Ingredients

  • 4.5 cl / 1 1/2oz Kuma Gin

  • 2.2 cl / 3/4oz Red Oolong Kumquat Syrup

  • 6 cl / 2oz Tonic Water

  • 1 Dash Frankincense Hydrosol

  • Rosemary Garnish

Preparation for Red Oolong Kumquat Syrup:

  • Use a water-to-red-oolong ratio of 60:1.

  • Bring water to a boil and steep the tea leaves for 5 minutes.

  • Strain the tea leaves and mix the resulting tea with concentrated kumquat juice at a ratio of 1:3.

Steps

  1. Add the gin, red oolong kumquat syrup, the Frankincense Hydrosol and ice in a shaker.

  2. Shake until well-chilled.

  3. Double-strain into a chilled cocktail glass.

  4. Top with tonic water and gently stir.

  5. Garnish with rosemary.

  6. Enjoy!
